Breakfast with BAE.

We all know that breakfast is certainly the most important meal of the day. The one meal we all get excited for on a Sunday morning that helps us on our journey from snooze-fest to alive and kicking.

I am sure you all have your breakfast go-to’s, most people have their firm favorites, whilst others insist on following ‘foodie’ trends. But that isn’t so bad, especially when such trends taste too good to be true, and are actually now stated as a ‘healthy option’.

Behold, the humble avocado.

Ignored for many a year until the boom from celebrity chefs, it has now become one of the most popular food choices to add to your breakfast. And why wouldn’t it be; with the highest protein count of any other fruit, more potassium than a single banana and a whopping 30 grams of polyunsaturated and monounsaturated fat. What a hit!

“So how do I integrate this in super fruit into my morning routine?” I hear you cry. By simply adding it to your bacon & eggs and slapping it between a sweet brioche bun. We like to call it BAE for short.

Cook the eggs, fried works best, and then place them onto the base of your lightly toasted bun and top with crispy bacon. Gently mash your avocado with a fork and a little salt and pepper to taste, then dollop this glorious green pulp on top. For extra luxury add a little slice of smoked cheese prior to popping on the lid.

Voila!!
